With a footprint of only 3’x3’, this compact, single stemmed bush squash isperfect for smaller suburban gardensthan the more traditional and much bigger, multi-branched vines. The smaller Winter squashes are well suited to modern family meals, too. Plant in rich garden soil (squashes love compost) and keep the plant evenly watered. Full sun and good air circulation are important, particularly on the coast. The 1.5½ pound dark green fruit will mature around 75 days after planting, when the skin turns from shiny to dull. Leave around 1” of stem when you cut and the acorn will keep for 5-8 weeks. The flesh is golden and sweet with a nutty flavor. Excellent for roasting and stuffing.
