Dandelion
 ‘Red Rib’
(Chicorium intybus)

We are sometimes asked for low maintenance drought tolerant perennial edibles & this plant fits the bill! This “dandelion” is similar to some of the common edible weeds you are probably familiar with (Dandelions, Chicory & Purslane) but is bred for its better flavor & showy stem color. The taste is slightly bitter, but less than its wild brethren & is sweeter early in the season. You can’t beat this green for nutritional value, either. It’s just domestic enough to belong in the garden & just wild enough to grow there with very little assistance. The roots are edible as well, as are the periwinkle blue flowers, which arrive in Summer & are a great treat to your local insects! To 18” tall & wide.
