Parsley 'Flat-Leafed Italian'


Many people think of parsley as a decorative garnish, but in European traditions it is the work-horse of herbs. Its sweet flavor renders richness to almost any dish or stock. It also makes a really fine parsley pesto. I grew up with curly parsley but flat-leafed Italian is much tastier & because the leaves are smooth, it does not collect soil in frilly foliage. Italian parsley is a vigorous herb that can grow 2' tall & wide when spaced 1 to 1 1/2 feet apart. If planted closer, it will not get as big. Plant in good garden soil & keep well-watered in the dry season. Twist off the stems as you need them. It will flower & go to seed in the Spring & self-sows easily. I usually leave some plants to go to flower since the flowers are very popular with beneficial insects. This practice also ensures a new crop of plants. Thin the seedlings to ensure good-quality pickings.
