Kale ‘Dinosaur’
(aka ‘Lacinato’)

I have to buy Dinosaur Kale whenever I see it at the farmer’s market. It looks so healthy! And it is! Full of powerful antioxidants, Kale is said to be a good cancer preventative. Dinosaur Kale is named as such because the leaves look as if they could be the same texture as dinosaur skin. Also, I think it looks like something a dinosaur might have eaten. Growing 2-3’ tall & 2-2.5’ wide, the dark blue-green leaves can be harvested throughout the season. Very Winter hardy as well as heat tolerant. Great stir fried with butternut squash & pecans. Yum!
